Our Coconut Mojito recipe has everything you need for a refreshing summer beverage. For this easy recipe, we muddle our fresh mint in the bottom of a tall glass. Then, we pour the white rum, but you can also use coconut rum if you like.

Then, we fill the glass with pineapple juice and top it with coconut water for a tropical spin. The last thing we do to make this coconut cocktail is top it with fresh ice and give it a stir! Voila! You’ve got a delicious tropical drink that tastes like a vacation in a glass!

What You Need to Make a Coconut Mojito

  • White Rum – Or Coconut or Pineapple Flavored Rum, if you have it handy. 
  • Coconut Water with Pineapple – We recommend Vita Coco!
  • Fresh Pineapple Juice – You can also use store-bought, but fresh is always best!
  • A Handful of Fresh Mint Leaves
  • Ice

How to Make a Coconut Mojito

  1. Muddle the mint in the bottom of your glass and fill it with ice.
  2. Pour the rum and pineapple juice into the glass and top off with the coconut water.
  3. Give a quick stir and enjoy responsibly.
