St. Patrick’s Day is one of my favorite holidays to cook for! I too love corned beef and cabbage, but I also love cooking all kinds of other things ranging for actual Irish-inspired foods, booze-infused foods, and then anything green or rainbow colored. I usually prepare the traditional corned beef and potatoes. Although, what I love about that are all the leftovers. They make the best melted cheese sandwiches…I really look forward to that. Corned beef is like turkey for me. I only have it once a year, so it is always a special treat.
